Ingredients

  • 2 small salad tomatoes or large roma tomatoes
  • 1 tsp oregano
  • 1 tbsp fresh chopped parsley
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • 1 tbsp premium grade balsamic vinegar
  • dash salt

Preparation Instructions

  1. Cut tomatoes into slices and remove seeds. Place tomatoes on plate or shallow dish.

  2. Mix together herbs, garlic, olive oil, balsamic vinegar and salt.

  3. Pour mixture over tomatoes and allow to rest in the fridge for 15 to 30 minutes, up to a day.
