Paleo Pumpkin Pie

A nicely spiced pumpkin pie without all the processed sweeteners.

Ingredients

  • 2 tsp coconut flour
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 1/2 tsp ground ginger
  • 1/8 tsp ground cloves (optional)
  • 1/8 tsp ground nutmeg (optional)
  • 1 tbsp buckwheat honey
  • 3 tbsp honey
  • 1/2 to 1 tsp pure stevia powder, or equivalent in pure liquid stevia
  • 1 1/2 cups pumpkin puree
  • 3 large eggs or 4 medium eggs
  • 1 cup whipping cream
  • 1 9-inch prebaked pie crust

Preparation Instructions

  1. Preheat oven to 325 degrees F.

  2. Place all ingredients (except for pie crust) into a food processor and process until well mixed.

  3. Pour mixture into pie crust and bake until center is set, or no longer jiggles when you move the pan, about an hour and 15 minutes. Check at the hour mark in case your oven runs hot.

  4. Cool completely or chill before serving.
