Gluten Free Pie Crust

A shortbread-like crust that resembles a graham cracker crust.

  • 3/4 cup sunflower seeds
  • 3/4 cup rice flour
  • 2 tbsp cold butter
  • 3.5 tbsp lard
  • 1 tbsp cold water
  • 1/4 tsp salt
  • 1 small egg
  • 1/4 tsp baking soda
  • 1 tbsp fresh lemon juice or apple cider vinegar

Preparation Instructions

  1. Preheat oven to 325 degrees F.

  2. Place sunflower seeds in food processor and process until seeds are ground into a fine meal.

  3. Add rice flour, butter and lard. Pulse or process until well mixed and flour resembles graham cracker crumbs.

  4. If desired, reserve half of the egg white and set aside. Add remaining ingredients and process until ingredients are incorporated and dough somewhat forms a ball.

  5. Press dough evenly into the bottom of a 9" pie pan or slightly larger square baking dish.

  6. Poke the pressed dough a few times throughout with a fork. If you have reserved part of the egg white, brush the egg white using a pastry brush over the dough.

  7. Bake in preheated oven for 20 to 30 minutes or until light brown. Cool for 30 minutes to an hour before adding toppings and pie ingredients.
