Stir Fried Lettuce

- 1 lb romaine lettuce or romaine lettuce hearts
- 4 cloves garlic, minced
- 4 slices peeled ginger (about 1/2 inch nub)
- 4 tbsp fat (lard, coconut oil or ghee)
- 1/2 tsp salt, or to taste
Chop lettuce crosswise into 1 to 1.5 inch slices.
Heat fat in large wok or saute pan at medium-high heat.
Add ginger slices and allow to sizzle for a minute or so, or until fairly aromatic.
Add garlic and stir briefly before adding about 1/3 of the lettuce.
Turn the heat to high, and stir the lettuce until partially wilted, adding more lettuce until all of the lettuce has been added and has wilted.
Add salt and stir to incorporate. Turn the heat to low and cook covered for a few minutes, or until lettuce is to the desired tenderness.
If desired, remove ginger slices before serving.
