Garlic Greens

A simple way to cook your swiss chard.

  • 1 lb swiss chard or other green leafy vegetable, washed and stems removed
  • 4 cloves garlic, roughly chopped
  • 1 small onion, sliced
  • 4 tbsp lard
  • 1/2 tsp sea salt
  • 3 tbsp water

Preparation Instructions

  1. Heat 1 tbsp lard in a saute pan at medium heat. Add onion and garlic. Saute for a few minutes until onion and garlic are well coated with the lard.

  2. Add 3 tbsp water and the salt to the onion and garlic mixture. Turn heat to low, and cook covered, stirring occasionally, until all the water has evaporated and onion and garlic mixture is caramelized.

  3. Turn heat up to medium and add 3 tbsp lard to the pan.

  4. Chop swiss chard or other green leafy vegetable crosswise into 1 inch wide strips. Add the chopped greens to the pan and stir until it has wilted. Depending on the size of your pan, you may need to add the greens to the pan in batches.

  5. Once all of the greens have been added to the pan, turn the heat down to low and cook covered, stirring occasionally until the greens are tender, about 15 minutes.
